ELABORATION
Manual harvest of 7103's own vines of Premsal Blanc. Subsequent passage of the grapes through a selection table where strict quality control is carried out. Gentle pressing of the bunches at low pressure, in a pneumatic press, to avoid oxidation. Fermentation in stainless steel tanks at a low temperature of approximately 16ºC, for about 30 days, to preserve the freshness of the aromas. The Premsal brings fresh aromas of citrus and white fruit to the wine, as well as a great delicacy to the palate.
TASTING NOTES
Colour: A golden yellow colour. Clean and bright.
Aroma: Aromas of white fruit such as pear, and citrus hints of lime.
Taste: Very pleasant entry on the palate that gives rise to a graceful and lively mid palate. A delicate finish in the mouth and a bitter touch that adds life to it.
Pairing: Ideal to enjoy mid-afternoon with aperitifs. It also pairs well with white fish and rice.
40 BRACES NEGRE
D.O.: Vi de la Terra de Mallorca
Grape varieties: 100% Giró Ros
Alcoholic degree: 13.5%
Shelf life in years: 6-8
Production: 1.200 bottles 0.75 L
Matured rosé, sweet and with delicate aromas reminiscent of ripe red fruits, made exclusively with the Giró Ros variety from Mallorca.
WINEMAKING
The grapes are harvested by hand from our own Giró Ros vineyards. The grapes are then passed through a selection table where a strict quality control is carried out. Gentle destemming and crushing. Maceration and fermentation of the must with the skins for 15 days at a temperature of 16ºC to preserve the varietal aromas and give the maximum colour of the grape which reaches pinkish tones. Gentle pressing of the bunches at low pressures in a pneumatic press. Aging in an ovoid tank of 1000 litres with micro-oxygenation for 3 months. The Giró Ros, although very golden, turns to pink and gives the wine ripe aromas of red fruit, as well as a great unctuousness in the mouth which makes it a rosé with carácter.
TASTING NOTES
Color: Pale pink color. Clean and bright.
Aroma: Aromas of pink flowers such as peach and hints of pastries and subtle toasted wood.
Taste: Sweet entry on the palate which gives way to a voluminous and lively passage through the mouth. The finish is very long and reminiscent of toasted oak.
Pairing: Ideal to enjoy with a good meal: white fish and rice dishes or white meats.
