A young, fresh white wine with delicate aromas reminiscent of citrus and white fruit, made with the Mallorcan variety Premsal Blanc.
ELABORATION
Manual harvest of 7103's own vines of Premsal Blanc. Subsequent passage of the grapes through a selection table where strict quality control is carried out. Gentle pressing of the bunches at low pressure, in a pneumatic press, to avoid oxidation. Fermentation in stainless steel tanks at a low temperature of approximately 16ºC, for about 30 days, to preserve the freshness of the aromas. The Premsal brings fresh aromas of citrus and white fruit to the wine, as well as a great delicacy to the palate.
TASTING NOTES
Colour: A golden yellow colour. Clean and bright.
Aroma: Aromas of white fruit such as pear, and citrus hints of lime.
Taste: Very pleasant entry on the palate that gives rise to a graceful and lively mid palate. A delicate finish in the mouth and a bitter touch that adds life to it.
Pairing: Ideal to enjoy mid-afternoon with aperitifs. It also pairs well with white fish and rice.

With this wine we intend to show the great potential of the oldest vines of the native Mantonegro variety. Made only in years of exceptional harvests. The deep roots of the vines planted in 1961 give the wine the characteristic terroir of the vineyards of Santa María del Camí and offer a complex, mature and elegant wine, with a great fruit expression. With this wine we want to demonstrate that Mantonegro has nothing to envy to other international varieties and that it can do battle with anyone.
WINEMAKING
Manual harvest in the vineyard. Selection on the table, bunch by bunch, where only the best bunches are accepted. Subsequently, a fermentation is carried out at temperatures between 25 and 28º for about 35 days in order to extract the maximum expression of the grape. Aging in two 500-liter French oak barrels for 12 months and 3 more months in the bottle.
TASTING NOTES
Color: Cherry red with a garnet rim.
Nose: Ripe red and black fruit. Notes of cocoa and liquorice, toasted aromas from a new barrel.
Mouth: Very fine, complex, suggestive, broad entry on the palate. Consistent and friendly, medium-tall body, with nerve, powerful, expressive and long.
Pairing: Grilled meats, game meats, delicate stews, cured cheeses, Iberian ham. Perfect with high purity cocoa chocolate.
